As my technical knowledge and abiltity is very limited I am asking advice on this . I have an LHY Audio 12v power supply . However it does not deliver enough power to replace the wallwart used by my Virgin Media Router . Is it possible to increase the output of this power supply to offer a decent 5 amp rather than the weedy 2 amp it currently has ? Is this something that could be done at sensible cost (not by me) . Or would it just be better to find a replacement power supply that offers 5 amp output already ?

No, you'll need a bigger power supply unfortunately. Each power supply has a maximum it's capable of delivering.

It'll totally depend on the circuit. We always over spec the transformer on raw VA ability, but more than 2x, unlikely. If it uses a reg IC that ic will have built in limits and the thermal dissipation will have limits.
While you could theoretically replace a 1 amp IC with a 2 amp IC in a suitably over specced psu, you're unlikely to get what you want out of it.
Much easier to buy/ build a new one.
