OK there’s been a few discussions on here that coax cables are not 75 ohm, so is Toslink in any way the better option?
Is there a difference between plastic or glass for the carrier medium?

Yes, no, a bit, maybe, jitter
Sorry, extremely childish of me.
I believe (and I'm probably wrong) that using appropriate connectors (BNC) with correct crimping technique and careful manufacture, 75ohm through the cable can be achieved (or near enough).
Like I say though, probably wrong.
Not a major fan of Toslink, always sounds a bit flat in comparison to coax. As I understand it the fibre vs glass reveals no real difference, but some say there is of course.

Gary Toslink wouldn't be my weapon of choice, but I have a genuine Sony glass cable here and a very decent BNC to RCA cable that you're welcome to loan Gary. Try for yourself.

Fitted with 75 ohm BNC plugs then it is 75 ohm, as the dimensions are correct for 75 ohm impedance.
The problem with Toslink is the signal has to go through two extra electronic circuits, to convert to and back from light.

Toslink could be better if you have to transfer the signal through a really noisy environment?

Often play with both coaxial and toslink into dacs . Seems to vary with equipment, sometimes I like the toslink and other times coax . Lean to towards toslink for clarity though
